I've never used one. I would be worried about chipping the blade too. I've heard they are very sharp though.

Pros-sharp and stay sharp. Cons-brittle drop it and it chips (and dropping knives is part of cleaning fish). Can't see using one for big bony fish either as the blade might chip on rib bones they are strictly for slicing. Also when they finally do need sharpening you need to send them back to the manufacturer.

Does anyone own a ceramic knife? I was told they are the best for filleting and was wondering what anyones experience has been. Seems hard to find as well, I've only seen a few places offering them.
